Frico with potatoes
Montasio Cheese (or other semi-soft cheese): 250g
Grate the potatoes on the large holes of a box grater set in a large bowl. Grate the cheese and add to the potatoes. Mix well and season with salt and pepper.
Dice the onion and add it to a skillet with some olive oil. Cook on medium heat until tender, stirring.
Add the potato mixture and gently press down to form a potato cake. Cook over low heat for 15 minutes or until gold at the bottom.
Gently flip the frico and continue cooking for other 15 minutes or until golden.
Serve warm and cut into wedges.
