Pappa al pomodoro
Old Tuscan bread (or other stale country bread): 350g
Garlic: 2 cloves
Tomato sauce: 800g
Rub a garlic clove on the bread, set aside.
Heat some olive oil in a skillet and cook the garlic clove until fragrant. Add the bread slices and cover with tomato sauce.
Cook, stirring occasionally, until the tomatoes have cooked down, about 10 minutes and the bread is soft. Taste and adjust seasoning.
Simmer, stirring and mashing the bread, for about 10 minutes. Stir in the basil, taste and adjust seasoning. Serve hot, warm, or room temperature.
